Spicy Orange Chicken

Ingredients
- 1/2 lb. boneless, skinless chicken tenders
- 1 c. instant rice
- 2 c. sliced celery
- 1/4 c. orange marmalade
- 2-3 T. spicy Szechuan sauce
- 1 can mandarin oranges, undrained.

Preparation
Step 1
Preheat oven to 450 or grill to medium-high
Center half of chicken tenders on one piece foil.
Arrange rice around chicken.
Top with half of celery, marmalade, and Szechuan sauce. Use slotted spoon to put half of oranges on top, reserving juice.
Bring up foil sides, double fold top an done end. Through open end, pour in half of juice. Double fold to seal packet.
Repeat, making two packets.
Bake 18-22 minutes IN OVEN (on cookie sheet)
OR
Cook 12-14 minutes ON GRILL
