Strawberry Cobbler

This is so easy and SO good - a people-pleasing strawberry cobbler for sure! A cookie sheet on the oven rack below the cobbler will catch any drips.
Ingredients
- 1/4cup1/4 cup butter or margarine, softened plus 1/4 cup butter or margarine, chilled, divided
- 3/4cup3/4 cup granulated sugar
- 1large1 large egg
- 1teaspoon1 teaspoon vanilla extract
- 1 1/2cups1 1/2 cups all-purpose flour, divided
- 1 1/4teaspoons1 1/4 teaspoons baking powder
- 1/2teaspoon1/2 teaspoon salt
- 1/2cup1/2 cup milk
- 3cups3 cups fresh strawberries, cut in half lengthwise
- 1/4cup1/4 cup brown sugar

Step 1
Preheat oven to 350°F. Grease an 8-inch square or 9-inch round baking pan. Set aside.
Beat softened butter at medium speed with an electric mixer. Gradually add granulated sugar, beating well. Add egg and vanilla extract, mixing well. Set aside.
In a separate bowl, combine 1 1/4 cups flour, baking powder and salt. Add to butter mixture alternating with milk, beginning and ending with flour mixture.
Spoon half of the batter into prepared baking dish. Arrange strawberries on top, cut side down. Cover with remaining batter. Set aside.
Combine 1/4 cup flour and brown sugar. Cut in chilled butter with a pastry blender until crumbly. Sprinkle over strawberries.
Bake 1 hour or until a wooden toothpick inserted in center comes out clean.
Serve warm with ice cream or sweetened whipped cream.
