Grilled Shrimp

Shrimp or prawns ,called "gambas" in Portugal, are often served in the following manner. We ate them from small skewers that had held them for grilling, but an interesting variation is to cook them quickly in a skillet in their marinade and serve over rice as a main dish.

Ingredients
- 1 1/2 pounds of peeled uncooked shrimp
- 4 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon piri- piri
- 1/3 cup brandy
- 1/4 cup chopped parsley
- 4 skewers

Preparation
Step 1
Combine all ingredients in a bowl, cover and refrigerate for several hours or overnight.
Divide shrimp into four portions and pass the skewers twice through each shrimp. Either broil
Or grill shrimp for several minutes on each side, turning once. Do not over cook. If using the alternate method of cooking, place shrimp and all the marinade in a large skillet and cook over medium high heat for 4 to 5 minutes or until the shrimp turn pink. Do not overcook.
Serve over rice.
