Ingredients

  • 2

    c water

  • 1

    c uncooked white rice

  • 1

    egg beaten

  • 1

    T sesame oil

  • 1

    small onion, diced

  • 1

    stalk celery, diced

  • 5

    oz cooked shrimp

  • 1

    small carrot, diced

  • 1/2

    red bell pepper, diced

  • 1/4

    c snow peas, trimmed & halved

  • 1/2

    green bell pepper, diced

  • 1/4

    t soy sauce

Directions

In med saucepan birng waer to a boil. Add rice; return to boil then reduce heaat to low, cover & simmer 20 minutes or til tender. In small skillet, scramble the egg in small amount sesame oil. Remove from heat. In large skillet, brown onion and celery in remaining sesame oil. Add shrimp, carrot, peppers & peas. Add rice and stir well. Add soy sauce if desired. Add egg. Stir thououghly until heated through.
