BANANA PUDDING - VANILA WAFER

Ingredients

  • 1 box nabisco Vanilla wafers
  • 3/4 cups of sugar
  • 1/3 cup of all purpose flour
  • Dash salt
  • 3 eggs, separated
  • 2 cups milk
  • 1/2 tsp vanilla extract
  • 5 ripe bananas, sliced

Preparation

Step 1

1. Make a layer of vanilla wafers & bananas on bottom of 9 x 9 foil pan
2. Mix 1/2 cup sugar, flour, and salt.
3. Beat egg yolks and milk.
4. Blend in the sugar, flour, & salt into the egg & milk
5. Pour into skillet and stir constantly and slowly for 10-12 minutes
6. When thickened, remove from heat and stir in vanilla
7. Spread small amount of this mix (custard) over the layer of vanilla
wafers
8. Cover with another layer of vanila wafers & bananas
9. Pour on another layer of custard
10. Continue to layer until out of custard, wafers, and bananas
11. Beat the saved egg whites, gradually adding the remianing 1/4 cup
sugar
12. Spoon on top of custard, spreading to cover entire surface
13. Bake @ 350 for 15 - 20 minutes or until browned.
14. Cool before serving
