Preparation

Step 1

Heat oil (2-3 inches)in a heavy 3-quart pan or deep fryer to 350 degrees.

Cut fish into 1-2 inch pieces.

In a paper bag or Ziplock bag, place 1/4 cup of the flour or Bisquick. Add the pieces of fish, a few at a time and shake to lightly coat the fish. Set fish aside on rack.

In a bowl, blend the Bisquick, salt, egg and the beer. If the batter is still too thick, add more beer 1 to 2 tablespoons at a time.

Dip fish pieces into the batter using a skewer. Let excess batter drip into the bowl.

Fry fish in the hot oil about 2 minutes on each side or until a golden brown. Drain on paper towels.

Serve hot with French fries and tartar sauce.
