Upside-Down Bacon Pancake
- 6 bacon strips,coarsely chopped
- 1/4 c packed brown sugar
- 2 c. complete buttermilk pancake mix
- 1 1/2 c. water
- maple syrup & butter, opt.
In lge ovenproof skillet, cook bacon until crisp. remove bacon to paper towels. Remove drippings, reserving 2 T. Return bacon to pan w/reserved drippings, sprinkle w/brown sugar.
In a small bowl, combine pancake mix & water just until moistened. Pour into pan.
Bake at 350degrees for 18-20 mins. or until toothpick comes out clean. Cool for 10 mins. before inverting onto a serving plate.
