Ingredients

  • 1

    lb of scallops

  • 2

    tablespoons of Olive Oil

  • 2

    teaspoons of minced Garlic

  • Salt and Pepper to taste

  • 3

    cups of Chicken Stock

  • 1

    cup of Quick Grits

  • Salt and Pepper to taste

  • 2

    teaspoons of minced Garlic

  • ¼

    cup of Milk

  • ½

    cup shredded Parmesan Cheese

Directions

Bring Chicken Stock, Garlic and Salt to a boil. Stir in Grits. Allow to cook the recommended time. Add Cheese and thin grits as needed with milk. Heat pan with Olive Oil. Saute Garlic. Salt and pepper rinsed Scallops. Sear Scallops for about 3 minutes on each side. When serving place scallops on to of the grits. Do not mix them together.
