Ingredients
- 1 beef brisket (4 lbs)
- 1 onion thinly sliced into rings
- 1 cup barbeue sauce
- 2 lbs. red potatoes (about6) cut into 1 1/2 inch chunks
- 1 lb carrots cut into 1/2 inch slices

Step 1
Heat oven to 325 degrees
Place meat in roasting pan, fat side up. Top with onions and barbecue sauce. Scatter potatoes and carrots around meat. Bake covered for 3 hours or until meat is done.
Using a slotted spoon remove potatoes and carrots to serving plate. Pour sauce and onions into a pan and bring to boil under high heat. Lower temperature to medium low and simmer for 5 minutes, stirring occasionaly until thicken.
Carve meat across the grain into thin slices. Serve with vegetables and sauce
