Ingredients
- 1 small red onion,minced
- 2 cloves garlic,minced
- 1 ripe tomato,peeled,seeded,and diced
- 4 springs cilantro,chopped stems and all
- 1 tbsp fresh lime juice
- 1 jalapeno pepper,seeded and diced
- 2 tbsp olive oil
- 2 ripe avocados,peeled,seeded,and finely diced
- salt and pepper,to taste

Preparation
Step 1
Combine all the ingrsdients except the avocados and salt and pepper in large bowl,and toss thoroughly.Fold the avocado in gently so the flesh does not break up any further.Add salt and pepper to taste(the avocado benefits from a healthy dose of salt),and if desired add a little more olive oil at the end to moisten the mixture.It should have the texture of tomato salsa.Use within 24 hours.If storing overnight,gently place a pice of cling film directly on the surface of the salsa to help retard browning.
