Ingredients
- nonstick cooking spray
- 3/4 cup chopped onion (scallion)
- 3 clobves garlic, minced
- 1 tsp olive oil or cooking oil
- 2 10 oz packages frozen chopped spinach, thawed,
- and well drained
- 1 cup low-fat cottage cheese, drained
- 1 cup crumbled feta cheese (4 oz)
- 1/2 cup refrigerated egg product
- 1 tbs snipped fresh oregano or 1 tsp dried oregano,
- crushed
- 1/4 tsp coarsely ground black pepper
- 1/4 cup finely shredded Parmesan cheese (1 oz)
- 2 tbs fine dry bread crumbs

Step 1
Lightly coat a 9 inch pie plate with nonstick cooking spray; set aside. In a medium saucepan cook onion and garlic in hot oil until onion is tender.
Stir spinach, cottage heese, feta cheese, egg products, oregano, and black pepper into onion mixture. Spoon the mixture into the prepared pie plate.
In a small bowl combine Parmesan cheese and bread crumbs; sprinkle over spinach mixture. Bake, uncobered, in a 350 oven for 30 to 35 minutes or until a knife inserted near center comes out clean. To serve, cut into wedges.
