  • 1 medium onion, diced
  • 1/2 green pepper
  • 1 teaspoon parsley
  • saltine crackers
  • mozzarella cheese
  • sharp cheddar cheese
  • 1 eggplant

Preparation

Step 1

Peel, slice, and cook eggplant. Cover with salted water and par boil. Drain. Add fresh water, diced onion, green pepper, and parsley. Cook until tender. Mash/crumble in saltine crackers and place in a casserole. Cover with equal amounts of mozzarella and sharp cheddar cheeses. Bake at 350 degrees.
