Broiled or Grilled Swordfish

Ingredients
- 2 lbs. swordfish steaks (1"thick)
- 1 cup olive oil
- 1 tbsp. oregano, crumbled
- 2 tbsp. basil crumbled
- 2 tbsp. lemon juice
- 4 cloves garlic, pressed
- 1 tsp. celery salt
- 1 tsp. coarse black pepper
- chopped parsley

Preparation
Step 1
Cut fish into serving portions. Rinse fish under cold water; pat dry on paper toweling. Combine remaining ingredients, pour over fish. Marinate in refrigerator 30-60 min., turning once. Remove fish, reserve marinade for basting. Grill on well greased grill 4-6" from medium hot coals, or broil, 4" under heat, about 5 min., basting often with marinade. Turn carefully, baste often; grill or broil until fish is slightly opaque and just begins to flake with fork (4-5min). Arrange steaks on heated platter; garnish with chopped parsley. Serves 6.
