Mushroom-Spinach Strata

Ingredients

  • 1/2 cup plus 4 T butter, divided
  • 1/2 cup all purpose flour
  • 4 cups milk
  • 1/2 cup plus 4T grated Parmesan cheese, divided
  • 1 8oz pkg sliced mushrooms
  • 1/4 cup green onions, chopped
  • 2 8oz pkgs. cream cheese, softened
  • 2 eggs, beaten
  • 3 10oz pkg frozen spinach, thawed and drained
  • 8 10" flour tortillas

Preparation

Step 1

Prepare white sauce by melting 1/2 cup butter in a large saucepan over med heat.

Whisk in flour; cook one minute. Gradually add milk: cook 12 minutes, stirring constantly or until slightly thickened.

Stir in 4 T parmesan cheese: set aside.

Saute mushrooms and onions in remaining 4 T butter: add one cup of white sauce and set aside.

Mix cream cheese, eggs, spinach and 1 1/2 cups of white sauce.

Grease a 15"x10" casserole dish. Spread bottom of dish with 1/2 cup of white sauce.

Layer 2 tortillas on top of white sauce, then 1/2 of spinach mixture, then 2 tortillas, mushrooms, 2 tortillas, remaining spinach mixture and 2 remaining tortillas.

Top with 1 cup of white sauce and remaining 1/2 cup of parmesan cheese.

Bake at 350 for one hour.

Let stand 5 minutes before serving.
