Ingredients
- 5 small Japanese eggplants or 2 regular
- 1/3 cup fresh basil, chopped
- 3 oz. goat cheese crumbles
- 3 T. balsamic vinegar
- 1/2 cup toasted pine nuts
- 3 T. olive oil
- salt and pepper

Preparation
Step 1
Slice the eggplants in thin slices. Drizzle with olive oil and salt & pepper. Grill to desired doneness. Drizzle with balsamic vinegar, add goat cheese crumbles, pine nuts and chopped basil.
