Ingredients

  • 2 Tbs. Lemon Juice
  • Up to 1 1/2 Tbs. Olive Oil, Optional
  • 2 tsp. Dijon Mustard
  • 1/2 tsp. Salt
  • 1/2 tsp. Black Pepper
  • 1 can (6 oz) light tuna packed in water, drained
  • 1 (8 1/2 oz) can artichoke hearts packed in water, drained, and halved
  • 2 Celery Stalks, minced
  • 2 Medium Scallions, thinly sliced

Step 1

Whisk lemon juice, olive oil, if using, mustard, salt and pepper in a large bowl until smooth and creamy. Add the remaining ingredients and stir until combines and coated.
