California Tuna Salad

Ingredients
- 2 Tbs. Lemon Juice
- Up to 1 1/2 Tbs. Olive Oil, Optional
- 2 tsp. Dijon Mustard
- 1/2 tsp. Salt
- 1/2 tsp. Black Pepper
- 1 can (6 oz) light tuna packed in water, drained
- 1 (8 1/2 oz) can artichoke hearts packed in water, drained, and halved
- 2 Celery Stalks, minced
- 2 Medium Scallions, thinly sliced

Preparation
Step 1
Whisk lemon juice, olive oil, if using, mustard, salt and pepper in a large bowl until smooth and creamy. Add the remaining ingredients and stir until combines and coated.
