Ingredients

  • 1 medium size eggplant
  • 1/2 cup walnut pieces
  • 1/4 cup minced onion
  • 1/4 cup minced parsley
  • 1 garlic clove, minced
  • 1/2 chili pepper, minced
  • 1/2 tsp salt
  • Freshly ground pepper
  • 2 TBSP olive oil
  • 1 TBSP lemon juice

Preparation

Step 1

Prick eggplant with a fork. Cook uncovered on a plate in microwave for about 10 minutes, until soft and collapsed. Let cool.

Cook walnuts on plate for ~ 2.5 minutes in microwave – until fragrant and toasted. Finely chop.

Scrape eggplant into food processor (remove seeds); chop until coarsely pureed.

Stir in walnuts, onion, parsley, pepper, garlic, S &P.

Slowly pour in oil and lemon juice. Adjust seasonings.
