Banana Bread - from Marie Schuermann

  • 1 1/2 cup Flour
  • 1 1/4 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 tsp Cinnamon
  • 1/8 tsp Salt
  • 2 Slightly Beaten Egg Whites
  • 1 cup Mashed Bananas
  • 1/4 cup Brown Sugar
  • 1/4 cup Oil
  • Nonstick cooking spray



Step 1

In a medium bowl stir together flour, baking powder, baking soda, cinnamon and salt.

In large bowl stir together egg whites, bananas, sugar and oil. Stir flour mixture into banana mixture just til moistened.

Spray loaf pan with Pam. Spread batter in prepared pan. Bake at 350 for 45 to 50 minutes or until toothpick inserted in center comes out clean,

Cool in pan for 10 minutes. Turn out onto a wire rack and cool thoroughly. For easier sliding wrap bread in plastic wrap and store overnight.
