Island Shrimp

Ingredients
- 1 3/4 lbs. medium shrimp
- 1 large onion, finely chopped
- 2 garlic cloves, minced
- 1 large can peeled tomatoes
- 2 tsp. parsley, finely chopped
- 1/2 tsp. sugar
- salt and pepper, dash cayenne pepper
- 1/4 cup olive oil
- 1 cup crumbled feta cheese

Preparation
Step 1
Saute onion and garlic in olive oil over medium heat until translucent. Add tomatoes, parsley, sugar and spices. Lower heat, simmer uncovered for 1 hour, stirring often. Sauce should be thick. Add shrimp and cook until pink, about 3 mins. Preheat oven to 325 degree F. Spoon shrimp and sauce into casserole. Top with feta cheese and bake until cheese has melted, about 20 mins. Serve over rice.
