Potato Gratin

Ingredients
- 1 sliced onion
- 2 tbs. olive oil
- 1 seeded, sliced red bell pepper
- 1 lb. peeled, seeded and chopped tomatoes
- 2 minced garlic cloves
- 1/4 tsp. red pepper flakes (optional), salt and pepper
- 2 Tbs. chopped fresh basil
- 2 lb. baking potatoes and cut into 1/4" slices
- 1/2 cup shredded Gruyere cheese.

Preparation
Step 1
In large frying pan, saute, 1 sliced onion in 2 tbs. olive oil until soft (3-5min). Add 1 seeded, sliced red bell pepper and saute 3 min. more.
Add 1 lb. peeled, seeded and chopped tomatoes and cook stirring, until moisture evaporates. Add 2 minced garlic cloves and cook 1 min. Add 1/4 tsp. red pepper flakes (optional), salt and pepper to taste and 2 Tbs. chopped fresh basil.
Peel 2 lb. baking potatoes and cut into 1/4" slices. Spread half of potatoes on bottom of oiled 3 qt. baking dish. Top with half of vegetables and 1/2 cup shredded Gruyere cheese. Repeat layers.
Drizzle with 1 Tbs. olive oil and cover tightly with foil. Place on baking sheet and bake at 400° for 30 minutes. Remove foil and bake until tender and browned, about 15 min.
Sprinkle with 2 Tbs. chopped fresh basil.
