Maple Glazed Sweet Potatoes

- 3 lb. sweet potatoes
- 1/2 cup brown sugar
- 3 tbsp unsalted butter
- 2 tbsp orange juice
- 2 tbsp maple syrup
- 1/2 tsp salt
- 1/4 tsp maple extract
- 1/3 cup coarsely crushed gingersnaps

Step 1
Bring large saucepan of sailed water to a boil. Add sweet potatoes and boil about 20-25 minutes, until nearly tender when pierced with a fork, Drain and let cool. Heat oven to 350°F. When sweet potatoes are cool enough to handle, peel and slice 3/4 thick. Place slices in large bowl. In small saucepan heat brown sugar, butter, orange juice and maple syrup, Simmer 2 minutes or until sugar has dissolved. Remove from heat, then stir in salt and maple extract, Pour over sweet potatoes and gently toss so all slices are covered: Lightly butter a 13x9" glass baking dish. Arrange potato slices is prepared dish and pour any liquid from bowl over potatoes. Sprinkle top with crushed gingersnaps, Bake, uncovered, for 30 minutes or until potatoes are tender. Serve hot.
