Sour Cream Macaroni Salad

Ingredients

  • 8 ounce package elbow macaroni or other pasta
  • 1 1/2 cups diced tomatoes
  • 1 1/2 cups peeled, seeded and diced cucumber
  • 3/4 cup diced green, red or yellow pepper
  • 1/4 cup chopped celery
  • 1/4 cup finely chopped onion
  • 1 cup shredded Cheddar cheese
  • 1 2 ounce diced pimentos drained
  • 1/2 cup Mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup milk
  • Salt and pepper to taste

Preparation

Step 1

Cook macaroni according to package directions.
Rinse in cold water and drain well.
In a large bowl combine macaroni, diced tomatoes, cucumber, green pepper, onion, celery, cheese and pimento.
In small bowl, combine mayo, sour cream, milk, and salt and pepper.
Pour over macaroni mixture and toss to coat.
Refrigerate until ready to serve.

Note:
Can substitute Italian salad dressing for the milk.
