SWEET POTATO CASSEROLE

(Senator Russell's Sweet Potato Casserole)

Ingredients

• 3 cups mashed sweet potatoes
• 1 cup sugar
• 2 eggs
• 1 tbs. vanilla extract
• 1/2 cup melted butter
• Mix thoroughly and pour into buttered 1-qt. casserole dish.
• Topping
• 1 cup brown sugar
• 1 cup chopped pecans
• 1/2 cup regular flour
• 1/2 cup butter

Preparation

Step 1

Mix together with a fork and sprinkle on top. Bake for 30 minutes
at 350 degrees.
