Ingredients

  • 1 T. butter
  • 3 egg whites
  • 1/4 cup fresh spinach
  • 1/4 cup fresh arugula
  • 1/4 cup asparagus
  • salt and pepper
  • 1/2 avocado
  • 2 strips of bacon, cooked

Preparation

Step 1

Melt butter in a small pan over medium high heat. Saute veggies for about 2 minutes. Add egg whites and cook until it starts to set, then flip over and cook on other side.

Top with bacon and avocado.
