Onion Blossoms

Ingredients
- 4 large sweet onions(or 6 medium,or 8 small)
- oil for frying
- BEER BATTER
- 1 3/4 cup flour
- 1 1/2 tsp baking powder
- 1 1/2 tsp salt
- 3 Tbs yellow cornmeal
- 1 1/2 cups(12 oz) light beer
- 1 egg slightly beaten
- HONEY MUSTARD DIPPING SAUCE
- 3 Tbs mayonnaise
- 3 Tbs dijon mustard
- 1 1/2 Tbs honey
- salt and pepper to taste

Step 1
For the beer batter Combine dry ingredients in a large bowl. Add beer and egg,stir to combine, Refrigerate for 10-15 min.
Meanwhile,trim the ends of the onions,being careful that the root end stays intact. To form the blossom,cut each onion into 8-10 wedges. Cuts should not extend all the way to the root so that the onion remains in one piece.
Heat the oil in a pot or deep fryer over medium-high heat. Dip the onions into the beer batter,making sure to separate the wedges so that the batter covers all layers. Fry the blossoms in the hot oil for 8 min,turning if necessary. Drain on paper towels.
To prepare honey mustard sauce,combine ingredients in a bowl and mix well.
Serve blossoms with dipping sauce.
