Roasted Whole Chicken w/Roasted Rosemary Potatoes

  • garlic, rosemary & sage
  • kosher salt
  • little red potatoes

Step 1

Chop: garlic, rosemary & sage together. Add salt & rub inside chicken cavity. Truss chicken legs together and then bring string around to back and tie.

Rub the herbs over the whole chicken.

Put in deep frying pan and brown on all sides. Put in 400º oven for 45 minutes.

After ½ hour add ½ cup white wine and put back in oven for 15 mins.

Meanwhile, clean little red potatoes and mix with olive oil, rosemary and sea salt and bake in oven until tender.
