Cheese and Onion Pie

Crisp pie filled with onions, garlic, and parsley making them a yummy snack or meal.
Ingredients
- Filling:
- 3 tablespoons vegetable oil
- 4 onions, sliced thinly
- 4 garlic cloves, crushed
- 4 tablespoons parsley, finely chopped
- 3/4 cup sharp cheddar, grated
- salt & pepper
- Dough:
- 1 1/4 cups all purpose flour plus extra for dusting
- 1/2 teaspoon salt
- 1/3 cup butter, cut into small pieces
- 3-4 tablespoons water

Preparation
Step 1
Heat oil in skillet over low heat. Add onions and garlic and cook for 10-15 minutes or until onions are softened. Remove skillet from heat, stir in parsley and cheese. Season to taste with salt & pepper.
Meanwhile, make dough. Sift flour and salt into large bowl. Add butter and rub it with your fingertips until the mixture resembles bread crumbs. Gradually stir in water and mix to form dough.
Roll out the dough on a lightly floured surface and divide into 8 portions. Roll each portion into a circle 4 inches across. Use four of the dough circles to line 4 individual tart/pie pans.
Fill each circle with one quarter of the cheese/onion mixture. Cover with the remaining 4 dough circles. Seal edges of the crusts and make a slit in the top of each tart so steam can escape.
Bake tarts in oven preheated to 425 degrees for 20 minutes. Serve warm or cold.
