Coconut Pie

"Impossible pies" became popular in the 1970's when Bisquick printed a recipe for one on the back of the box. Oddly enough, the first one was coconut. These pies form a soft crust and "custardy" filling while they bake.

Ingredients
- 4 eggs, beaten
- 1/2 cup self-rising flour
- 1 1/3 cups sugar
- 1/4 cup (1/2 stick) butter, melted
- 2 cups milk
- 1 teaspoon vanilla extract
- 1 (8-ounce) container flaked coconut

Step 1
1. Preheat oven to 350 degrees F.
2. Beat all ingredients together and pour into a 10 inch pie plate. Bake 45 minutes. Although the filling seems loose, do not bake the pie any longer. It will set and make its own crust as it cools in the refrigerator.
