Banana peanut butter muffins

Ingredients

  • 1 cup flour
  • 3/4 cup whole wheat flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 2 medium bananas, mashed
  • 1 large egg, beaten
  • 1/3 cup sugar
  • 1/3 cup vegetable or canola oil
  • 1/2 cup milk
  • Creamy peanut butter
  • Jam or jelly or topping, optional

Preparation

Step 1

1. Preheat oven 400 and grease 30 mini muffin cups. Mix flour, salt, baking powder in bowl.
2. In another bowl, mash bananas. Then mix in oil and milk until smooth. Slowly combine dry and wet ingredients.
3. Using small scoop or spoon, drop 1tbsp of batter into each muffin cup and top with 1/2 tsp peanut butter. Place 1tbsp batter on top of the peanut butter to cover.
4. Bake for 13 minutes or until dry on top. Bake 30 minutes if using regular muffin cups.
