In single bowl whisk with metal whisk 2 c sour cream, 4 extra lage eggs, zest of one lemon, 3/4 tsp salt, 1 tsp baking soda, 3 tbsp sugar, 1 c all purpose flour. Heat griddle, brush with butter, pour 1/4 c batter and cook, start with medium high heat, they are dense so that may effect cooking time re burning. Can make batter night before. Also can make and put in 200 degree oven to keep warm. Dust with powdered sugar and put on carmalezlied apples. TO make those, preheat oven to 250, heat a wide ovenproof pan over low heat 3 minutes and add butter. When butter has stopped sizzling add 3 Gala apples that are at room tempterature and have been cored and cut into wedges with a poinch of salt. Increase heat to medium high and saute about 5-8 minutes until translucent and caramelized. Also can make batter into a crepe by adding 1/2 c whole milk and add apples as filling.
