Ingredients

  • Red Pepper Sauce:
  • 1 1/2 lbs. top sirloin steak, cut 1-inch thick
  • 2 teaspoons coarse grind black pepper
  • 3/4 teaspoon salt
  • 3/4 teaspoon sweet paprika
  • 2 cloves garlic, minced
  • 2 medium red bell peppers ( a 7-oz. jar of roasted red peppers may be substituted)
  • 1 teaspoon red wine vinegar
  • 1/4 teaspoon salt

Step 1

1.Cut beef into 1 1/4 x 1 1/4 x 1-inch pieces. Combine pepper, salt, paprika, and one clove garlic in large bowl. Add beef; toss to coat. Thread beef pieces evenly onto 6 12-inch metal skewers, leaving small space between pieces.
2.To prepare Red Pepper Sauce, broil pepper 3-4 inches from heat on a baking sheet, turning frequently, until skin bubbles and is evenly charred. Transfer to a sealable plastic bag; close and set aside until peppers cool. Peel charred skin from peppers. Remove seeds. Place peppers, vinegar and salt in a blender using pulse switch until coarsely chopped.
3.Place kabobs on grid over medium, ash-covered coals. Grill, covered, about 7-9 minutes for medium rare to medium doneness, turning once. Serve with Red Pepper Sauce.
