Chicken Sausage Skillet

Ingredients

  • 1 onion, thinly sliced
  • 1 green pepper, thinly sliced
  • 1 cup sliced zucchini
  • 2 T olive oil
  • 1/2 - 3/4 lb. chicken breast, thinly sliced
  • 1/2 - 3/4 lb. Italian sausage links, cut into 1/2" pieces
  • 2 14 1/2 oz. cans diced tomatoes, undrained
  • 1 garlic clove, minced
  • 3/4 tsp. basil
  • 3/4 tsp. oregano
  • Hot cooked rice or pasta

Preparation

Step 1

Saute onion, pepper, mushrooms and zucchini in oil until tender. Remove vegetables and set aside. Add chicken and sausage to skillet; cook until no longer pink. Drain.

Stir in tomatoes, garlic, basil and oregano. Return vegetables to pan. Bring to boil. Reduce heat; cover and simmer 10 minutes.

Server over rice.
