Apple Pie in a Skillet

Ingredients
- 1 stick butter
- 1 cup brown sugar (or Splenda brown sugar blend)
- 1 pkg. double pie crust (from the refrigerated case)
- 5 Granny Smith apples, peeled & sliced
- 1 cup white sugar
- 1 tsp cinnamon

Preparation
Step 1
Preheat oven to 350 degrees. Put butter in iron skillet and place in oven. Melt butter and add brown sugar. Stir and return to oven. When melted & bubbly, remove from oven. Place one pie crust on top of butter/sugar mixture, being careful not to burn yourself. Do not press down, just put the crust up the sides of the skillet.Mix apples and sugar/cinnamon mixture and add to skillet. Cover with top pie crust. Put edge down in skillet. Cook 45 minutes or longer until golden brown. Note: You better put a cookie sheet or whatever on rack below pie, because it will probably drip! Serve with scoop of cinnamon ice cream (soften vanilla ice cream and stir in cinnamon to taste). You can also pour over each serving a hot brandied butter or caramel sauce.
