Ingredients

  • 2 c. flour
  • 1/2 c. confectioners' sugar
  • 2 sticks butter
  • 2 c. sugar
  • 1 T. flour
  • 1 t. baking powder
  • 1/4 t. salt
  • 4 eggs, well beaten
  • 1 T. (heaping) grated lemon rind
  • 1/4 c. lemon juice

Preparation

Step 1

Sift flour and powdered sugar together. Cut in butter until well blended. Press mixture over bottom of a pan. Bake about 25 minutes at 300 degrees until lightly browned. Combine remaining ingredients and spread over crust. Bake at 350 degrees for 25-30 minutes. Sprinkle with powdered sugar.
