Sneaky Lentil Cookies
Cookies taste great and they are packed with healthy lentil puree
Puree: 3 cups water or broth; 1 cup favourite lentils; 1/4 tsp salt. Combine all ingred in saucepan over med-hi heat; bring to boil then reduce heat to slow steady simmer Cover tightly and cook until tender, about 15-20 min. Puree 4 parts cooked lentils with one part water.
- 1/2 cup butter, softened
- 2 cups brown sugar, packed
- 1 egg
- 2 tsp vanilla
- 1/2 cup lentil puree
- 2 cups all-purpose flour
- 1/2 tsp salt
- 2 tsp baking powder
- 2 cups chocolate chips

Cooking time 22mins
Preheat oven to 375F.
Use stand mixer or food processor to cream together butter and sugar until smoothly combined.
Add egg, vanilla, and lentil puree and continue until mixture is smooth once again
In separate bowl, whisk together flour baking powder and salt, evenly distributing finer powders among coarser ones.
Add dry ingredients to wet ingred and mix well
Stir in chocolate chips.
Roll into balls or drop by spoonful, about 2" apart on lightly oiled baking tray. Bake EXACTLY 12 minutes, cool.
