Clam soybean sprout in clear soup

Ingredients

  • 12 oz bean sprouts
  • 8 cups water
  • 1 lb unshelled mussels
  • 1 tablespoon “HON-DASHI”
  • 1 tablespoon chopped garlic
  • 2 stalks green onion
  • 1 Korean red pepper
  • 1 tablespoon salt
  • 1/2 teaspoon black pepper

Preparation

Step 1

1. Trim and wash bean sprouts.
2. Wash mussels thoroughly.
3. Put bean sprouts in medium size pot, add 8 cups of water and cover with lid.
4. Bring to boil and remove bubbly froth that forms.
5. After bean sprouts are cooked, add mussels, “HON-DASHI”, and chopped garlic. Continue boiling one more minute. Season with salt and pepper.
6. Garnish with finely crosswise cut red peppers and green onions.
