Ingredients

  • 1 cup yellow cornmeal
  • 1/4 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1 egg, beaten
  • 1/3 cup milk
  • 1/4 cup corn
  • 1/4 cup honey
  • 3 Tbls butter, melted
  • Honey Butter

Preparation

Step 1

Combine cornmeal, flour and baking powder; set aside.
In a separate bowl, combine egg, milk, corn, honey and butter.
Add egg mixture to cornmeal mixture, stirring just enough to moisten.
Fill paper lined muffin cups 2/3 full.
Bake at 400 degrees for about 20 minutes.
Serve with Honey Butter.
