Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 teaspoonsbaking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 tablespoons margarine
  • juice of 1 orange
  • 1 cup sugar
  • 1 egg cup chopped walnuts
  • 1 cup cranberries

Preparation

Step 1

Sift: flour, baking powder, baking soda, and salt

Melt: margarine in large bowl

combine: juice of the orange adding enough boiling water to make 3/4 cup

Add: grated rind of 1 orange, cup of sugar, and beaten egg.

Combine: dry ingredients

Add: chopped walnuts and cranberries

Bake: 350 for 60 to 70 minutes in greased pan

When cool, wrap in foil and allow to chill in fridge before slicing
