Blackberry Ice Cream Sandwiches

Ingredients
- 2 C. Vanilla Ice Cream
- 2 Tbsp. Creme de Cassis
- 32 Chocolate Wafer Cookies
- 3/4 C. Water
- 1/2 C. Creme de Cassis
- 2 Tbsp. Sugar
- 2 Tbsp. Lemon Juice
- 3 C. Fresh Blackberries

Preparation
Step 1
Let ice cream stand at room temp. for 15 min, or till softened. Stir well. Meanwhile, prepare 16 squares of aluminum foil, each one about 6-in. square. Brush creme de cassis over both sides of two cookies. To make sandwich, place 2 Tbsp. ice cream on one cookie, top with second cookie & gently press together. Run the blunt end of a knife around the edge to smooth. Wrap the sandwich in a foil square & place in freezer. Repeat with remaining cookies making 16 individually wrapped cookies. Freeze for 3-48 hrs. Combine water, 1/2 C. creme de cassis & sugar in a sm. pot. Bring to boil, reduce & cook about 10 min, or till reduced by half. Remove from heat & stir in lemon juice & blackberries. Cool to room temp. Serve 2 sandwiches with a spoonful of backberries & sauce.
