Grilled Cabbage Wedges with Kefir Cayenne Dressing

  • 1/2 cup kefir
  • 1 tablespoon mayonnaise
  • 2 teaspoons chopped scallions (white and light green parts only)
  • 1/2 teaspoon cayenne powder
  • 1/2 teaspoon freshly ground pepper
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon celery seeds
  • 1 head green cabbage
  • olive oil as needed

Step 1

Make the dressing:
In a small bowl, add kefir, mayonnaise, scallions, cayenne, pepper, salt and celery seeds. Using a whisk, combine the dressing until mayonnaise is thoroughly incorporated into kefir mixture. Taste, and adjust seasonings to your liking.

Make the cabbage:
Cut the cabbage in half, lengthwise down the core. Then, cut each cabbage half into 4 wedges, again lengthwise down the core. In total, you should have 8 wedges. Sprinkle cabbage with salt, as needed. To cook, prepare the grill for medium high heat. Coat the grill grate with oil, as needed. Cook cabbage wedges until wilted and apparent grill marks have formed, about 2-3 minutes per side. Remove from grill and transfer to a platter. Drizzle with dressing and serve.
