- SALAD:
- 3 firm-ripe peaches, pitted and sliced into rounds
- 6 oz buffalo (or other fresh) mozzarella, sliced into 8 rounds
- 2 oz thinly sliced prosciutto, cut lengthwise into thirds
- Fresh basil leaves, to taste
- DRESSING:
- 2 tsp EVOO
- 2 tsp white balsamic vinegar
- Kosher salt
- Freshly ground black pepper

Step 1
1. To make the dressing, whisk together oil and vinegar in a small bowl. Season with salt and a good grind of pepper.
