Simple Stir-Fried Ground Pork

Ingredients
- 1 1/2 tablespoons peanut oil
- 1 pound lean ground pork
- 1/2 pound shredded iceberg lettuce - (1 cup)
- 2 tablespoons dark soy sauce
- 1 tablespoon Shaoxing rice wine (or dry sherry)
- 2 teaspoons Asian sesame oil
- 2 teaspoons sugar
- 3 tablespoons finely-chopped scallions

Preparation
Step 1
Heat a wok or large frying pan until it is hot. Swirl in the peanut oil, and when it is very hot and slightly smoking, add the pork and stir-fry it for 2 minutes. Stir constantly to break up any lumps.
Toss in the lettuce; pour in the soy sauce, rice wine, and sesame oil. Sprinkle in the sugar and continue to stir-fly for another 3 minutes, or until the pork is cooked.
Toss in the scallions and give the mixture several good stirs. Serve at once.
This recipe yields 4 servings.
