Cedar Planked Atlantic Salmon with Maple syrup,soya and ginger marinade

Ingredients
- Marinade:
- 4-6 oz salmon fillets with skin on
- 4-6 x3.5 inch cedar planks presoaked in water for about an hour
- 1/4 cup canola oil
- 1/4 sesame oil
- 2 shallots finely chopped
- 3 garlic cloves finely chopped
- 2 tsp freshly grated ginger
- 1/4 cup Kikkoman soya sauce
- 3/4 cup maple syrup
- juice from 1 lemon

Step 1
Marinade:
Heat oils in a small pot. Add shallots, garlic and ginger. Simmer without browning until tender, stirring occasionally.
Then add soya sauce, maple syrup and lemon juice. Boil uncovered until reduced to about 3/4 cup.
Refrigerate until cooled to room temp.
Place salmon in a bowl just large enough to snugly hold the fish.
Add half of the marinade and turn to coat. Marinate in the refrigerator for one hour, turning partway through
Place salmon, skin side down on the soaked cedar planks. Place planks on a baking tray and bake in a 350 oven for 20 minutes.
Brush salmon with glaze then continue baking for 5-7 minutes
The remaining glaze can be refrigerated for a least 2 months
