Chunky Chilli Beef And Cheese Meat Pie

Ingredients

  • 2 tablespoons EVOO
  • 1 chopped onion
  • 3 cloves crushed garlic
  • 1 pound diced beef, small dice
  • 1 1/2 tablespoons cumin
  • 1 tablespoon cayenne pepper, to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup beef stock
  • 1 cup vegetable stock
  • 3 tablespoons cornmeal
  • 1 tablespoon Worchestershire Sauce
  • shredded sharp cheddar cheese
  • Puff Pastry sheets
  • 1 recipe pie crust

Step 1

Pour the EVOO into a hot dutch oven. Add the onion and garlic and cook garlic is fragrant. Stir in the diced beef and cook until slightly browned. Stir in the cumin, cayenne and pepper, cooking until fragrant. Add the beef stock and Worchestershire sauce and bring to a simmer. Whisk the cornmeal into the vegetable stock and stir into beef mixture in pot. Continue stirring until the liquid starts to thicken and comes back up to a simmer. Cook for about 20 minutes, until beef is tender.

Roll out pie crust, put into mini pie pan and fill 3/4 of the way with chili mixture, top with cheese and puff pastry. Cook until golden brown.
