Ingredients

  • Caesar Dressing:
  • 1 1/2 lb Chicken breasts (fresh or frozen)
  • 1 cup Chicken stock (or 1 chicken bullion cubes + 1 cups water)
  • 1 cup Plain low fat Greek yogurt (or dairy free yogurt)
  • 1/2 cup Parmesan cheese, grated
  • 1 tbs Worcestershire sauce (or balsamic vinegar)
  • 1 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/2 tsp Mustard (dijon or yellow)
  • 1 1/2 tbs Lemon juice (or juice from one lemon)
  • 1 tbs White wine vinegar or (white vinegar)
  • 1/2 tsp Salt and pepper (or to taste)
  • Lettuce Wraps:
  • 8 Romain lettuce leaves, rinsed and dried 2
  • Optional: Additional parmesan cheese for topping (i prefer shaved)
  • 1 You could also use pre-shredded/pre cooked chicken or rotisserie chicken for this recipe.
  • 2 I recommend buying one head of romaine lettuce, this will give you plenty of lettuce for this recipe. This would allow you to have 2 lettuce wraps per serving. You could also swap out the lettuce wraps with 4 whole grain/low carb tortillas or buns.

Step 1



Prepare Chicken in the Crockpot: Place the chicken breasts in a slow cooker with chicken broth (or water). Cover and place on high heat for about 3 hours, or on low heat for 6 hours (4-8 hours if using frozen chicken), or until chicken is cooked through and is tender enough that it can be easily shredded. Remove the chicken from the slower cooker and pull chicken apart with two forks, until it is shredded to your liking. (If using pre-cooked chicken in this recipe, you can skip this step. You can also do this well in advance, and keep the shredded chicken in your fridge for up to 7 days.)

Prepare the Dressing: Place all of the ingredients for the dressing in a small bowl, and whisk together, or puree a blender to make it really smooth and creamy.

Put it Together: Toss the shredded chicken in the caesar dressing, and place on romaine lettuce leaves, dividing chicken mixture into 8 servings (about 1/4 heaping cup per lettuce wrap). Or divide chicken mixture between 4 whole grain tortillas or buns if desired (about 1/2 heaping cup chicken mixture over each sandwich). Top with additional parmesan cheese and black pepper if desired. Enjoy!
