- Peanut Dressing:
- Ingredients
- 3 tablespoons toasted sesame seeds
- 12 ounces linguine
- 1/4 cup creamy peanut butter or almond butter
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon melted coconut oil
- 1 tablespoon grated fresh ginger
- 1 tablespoon honey
- 1 tablespoon Sriracha (or Sameal Oelek)
- 1 teaspoon sesame oil
- Zest and juice of 1/2 lime
- 1/2 package frozen chinese vegetables
- 1 large chicken breast cut into strips or small cubes
- 1/2 cup loosely-packed chopped fresh cilantro
- Chicken broth or water to add if needed
- 1/4 cup roughly chopped skinless roasted peanuts, for garnish

Step 1
Cook the pasta until al dente. Drain, rinse and set aside.
For the peanut dressing: Whisk peanut butter, soy sauce, vinegar, coconut oil, ginger, honey, Sriracha, sesame oil and lime zest and juice in a small bowl. Thin with chicken broth or water if needed, 1 tablespoon at a time. (Dressing should be thick, but pourable.)
Stir fry vegetables in 1-2 T. high heat oil until crisp, remove to platter
Stir fry chicken until fully cooked
Add sauce, stir until thick, stir in vegetables, stir to coat well.
Place the pasta in a large mixing bowl and toss with cilantro. Add stir fry mixture. Top with the chopped peanuts and toasted sesame seeds and serve.
