Honey Roasted Sweet Potatoes

• 2 lbs. sweet potatoes
• 2 Tbs olive oil
• 2 Tbs honey
• 1 tsp lemon juice
• 1 /s tsp salt

Step 1

Preheat oven to 350 degrees.

Peel and cut sweet potatoes into 1 inch pieces and place in a 9 X 13 baking dish. In a small bowl whisk together olive oil, honey and lemon juice. Pour over potatoes and toss to coat. Season with salt and bake, stirring occasionally, for about 1 hour or until potatoes are tender.
