Turkey and Veggie Meatloaf Minis

  • 1/2 cup grated onion-didn't use
  • 7 tbsp ketchup, divided
  • 1 1/4 lb lean ground turkey
  • 3 cups shredded broccoli coleslaw, chopped
  • 1/2 cup fat-free liquid egg substitute
  • 1/2 cup quick-cooking oats
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1/2 cup mozzarella



Step 1

Preheat oven to 350 degrees. Line 9 compartments of a muffin pan with baking cups or spray with nonfat cooking spray. Combine all ingredients except 3 tbsp ketchup in food processor and mix. Distribute mixture evenly among cups. Brush 1 tsp. ketchup on top of each meatloaf. Sprinkle each with a little cheese. Bake until firm with lightly browned edges, 30 to 35 minutes.
