Ingredients

  • 6 medium potatoes (about 2 lb)
  • 1 t vinegar
  • 1 c fat free mayo
  • 1/4 t salt
  • 1 stalk celery, thinly sliced
  • 1/4 t white pepper
  • 1/2 medium green pepper, finely chopped
  • 2 eggs, cooked, yolks discarded. Coarsely chop the whites
  • 2 green onions or 1/4 c chopped onion
  • 1 t dry mustard
  • Paprika

Preparation

Step 1

Wash potatoes, peel and cut into cubes. Cook 20-25 minutes. Drain well. In large bowl, combine mayo, celery, green pepper, onions, mustard, vinegar, salt and pepper. Add potatoes and egg whites. Toss. Cover and chill for at least 6 hours. Garnish with paprika and parsley. 8 servings 116 calories
