Fresh Tomato Sauce

Ingredients

  • 3 Ripe tomatoes (about 3/4 pound)
  • 2 Tbsp butter
  • 2 Tbsp onion, finely chopped
  • 1 Bay leaf
  • 1 Tsp thyme
  • 1 Tbsp fresh basil, chopped
  • Salt, pepper to taste

Preparation

Step 1

Peel and chop tomatoes - should be about 2 cups
Heat 1/2 the butter in a small, wide skillet
When butter is melted add onion, thyme, tomato, bay leaf, salt and pepper
Cook for 15 minutes
Pour into blender and return to skillet
Reheat, add rest of butter and stir in basil
